After spending the latter part of today surrounded by hops fields, the unceasing aroma of hops and pretty much everything hops while attending Hopunion’s annual Hop School, I couldn’t think of a more appropriate beer of the week than, well, a very hoppy beer. Schwartzchild Black IPA is formulated with Briess’ Blackprinz® Malt. Weighing in at a hefty 64 IBUs, this IPA will beguile the mind with its light enveloping blackness while exhibiting the enormous hoppiness of a well structure IPA.
And speaking of hops, check out this video. It was taken today at Perrault Farms in Toppenish, Wash., where fresh hops were being loaded into a kiln in a super new, modern facility. Very, very cool.

Ingredients
- 6.6 lbs CBW® Golden Light LME
- 0.5 lbs Briess Blackprinz® Malt
- 0.5 lbs Briess Caramel Malt 20L
- 0.5 lbs Briess Caramel Malt 60L
- 0.5 lbs Briess Carapils® Malt
- 0.5 lb Cane Sugar
- 1 oz Amarillo Hops (10% AA)—Boil 60 minutes
- 0.5 oz (each) Amarillo, Cascade and Centennial Hops—Boil 10 minutes
- 0.5 oz (each) Amarillo, Cascade and Centennial Hops—Boil 1 minute
- 1 oz (each) Amarillo, Cascade and Centennial Hops—Dry hop
- 2 vials WLP060 American Ale Yeast Blend
- 1 capsule Servomyces Yeast Nutrient—Boil 10 minute
Procedures
- Perform mini-mash with 4 gallons of water and grains
- Steep at 152-158ºF for 30 minutes
- Add extract and cane sugar
- Bring to a boil
- Add bittering hops and continue to boil
- Add finishing hops and Servomyces as indicated
- Remove from heat
- Cool to 72ºF
- Transfer to primary fermenter
- Fill to desired level with cold water
- Oxygenate and pitch yeast
- Add dry hops after secondary fermentation
Fermentation
- Primary Fermentation: 14 days at 66ºF
- Secondary Fermentation: 14 days, dry hop
- Fermentation Notes: Bottle condition 1 month
