From now through the end of the year Carabrown® Malt is available from Briess and distributors (homebrewers, ask your lhbs to order some from their distrib). When our Technical Services staff set out to develop recipes using this relatively new member of the Briess malt portfolio, they landed upon a brown ale that showcases the smooth maltiness and slightly nutty flavor of Carabrown® Malt. Then they fittingly named it Talk of the Town. It’s an easy-to-drink ale, styled after Brown Ales found in Northern England. Ingredients
- 7 lbs Briess Pale Ale Malt
- 2 lbs Briess Carabrown® Malt
- 1 lb Pregelatinized Barley Flakes
- 1.5 oz Fuggles Hops (5% AA) – 60 minute boil
- 1 vial WLP060 American Ale Yeast Blend
Procedures
- Mash at 154-156ºF for 45 minutes
- Sparge at 170ºF
- Knock out at 65ºF
- Oxygenate highly
- Cool to 72ºF
- Oxygenate and pitch yeast
Fermentation
- Primary Fermentation: 10 days at 70ºF
- Secondary Fermentation: 14 days at 35ºF
- Fermentation Notes: Bottle condition
