I’m not trying to start any wars here, but when someone you respect says your Galaxy/Citra Double IPA is better than perfect, it can go to your head. So give me the name, this one time 🙂
Originally done as an all-grain recipe, you can just substitute out the 11 pounds of extract for 15 pounds of Briess Pale Ale malt and mash at 154°F for 90 minutes. This IPA is quintessential in its citrus and fruit flavor. It’s a big beer that’ll warm you up through the remainder of this wicked winter.
Better Than Perfect Double IPA
(5 gallons/19 L, all-grain)
OG = 1.081 FG = 1.016
IBU = 119 SRM = 14 ABV = 8.6%
Ingredients
11 lbs. Briess CBW® Pale Ale liquid malt
1.5 lbs. Briess Caramel 20L malt
Galaxy hops (60 min.) (1 oz. at 13% alpha acid)
Galaxy hops (30 min.) (2 oz. at 13% alpha acid)
Citra™ hops (30 min.) (2 oz. at 12% alpha acid)
Galaxy hops (10 min.) (2 oz. at 13% alpha acid)
Citra™ hops (10 min.) (2 oz. at 12% alpha acid)
Citra™ hops (0 min.) (2 oz. at 12% alpha acid)
2 Packs White Labs WLP001 (California Ale)
3/4 cup corn sugar (if priming)
Step by Step
Steep Caramel malt 20L at 154°F for about 20 minutes in 3 gallons of water.
Remove grains and bring water up to a boil.
Total boil time is 60 minutes.
Add 5.5lbs of CBW® Pale Ale liquid malt extract.
Add 1 oz Galaxy hops once a boil is reached.
After 30 minutes, add 2 oz of Galaxy hops and 2 oz of Citra™ hops.
Boil 20 more minutes and again add 2 0z of Galaxy hops and 2 oz of Citra™ hops.
Boil 10 more minutes and turn off heat.
Stir in 2 oz of Citra™ hops and 5.5lbs of CBW® Pale Ale liquid malt extract.
Chill the wort to 65°F and aerate thoroughly.
Pitch 2 packages of yeast. Ferment in primary at 65 – 70°F for two weeks.
Move to a secondary fermentor and age an additional two weeks.
Tips:
Consider purchasing a 30lb Mini Pail of extract. If purchasing 3.3lb canisters, freeze additional unused malt and use in your next batch or for a yeast starter.
Hop character will mellow with time, 2 months additional in bottles or secondary creates an exceptionally smooth Double IPA.
