Coalition Brewing in Portland, OR recently entered into some uncharted territory by putting together a sour Belgian Wit bier with assistance from both Briess and Wyeast Labs. This lacto brew had some brewhouse practices that are not typically used for production of “normal” beers (IPA, porter, etc). Pitching the lacto culture first at 90 degrees with no yeast and letting it sour down to a pH of about 3.3 over several days is certainly not something everyone will be doing in their brewhouse! Once the beer was pleasantly tart the Wyeast #3463 Forbidden Fruit yeast was pitched giving it a nice soft sourness with some lemony notes. This beer, while originally brewed for the Cheers To Belgian Beers fest in Portland, has been packaged in 22-ounce bottles and will be released in a week or so.
