From East Flanders, versatile yeast that can produce light Belgian ale to high gravity Belgian beers. A combination of fruitiness and phenolic characteristics dominate the flavor profile. Some sulfur is produced during fermentation, which will dissipate following the end of fermentation.

Procedures
- Upward step infusion mash with grains (123ºF 10 min; 145ºF 15 min; 151ºF 60 min; 160ºF 15 min; 168ºF 10 min)
- Collect 7.5 gallons into the boiler
- Boil down to 6 gallons
- Collect 5 gallons in fermenter
Primary Fermentation: 18 days at 75ºF
Secondary Fermentation: 50 days at 70ºF
Fermentation Notes: Bottle condition 6 months
Original Gravity: 1.094
Final Gravity: 1.021
Alcohol by Weight: 7.4%
