Ingredients
Quantity Ingredient Comment Malt Style 9.0 lbs Synergy Select Pilsen Malt Mash Grain Single Varietal Base Malt 1.0 oz Mittelfruh Hops (3.5% AAU) 60 min boil 0.5 oz Mittelfruh Hops (3.5% AAU) 30 min boil 0.5 oz each Mittelfruh, Saaz Hops (3.5, 3.0% AAU) 15 min boil 0.5 oz Saaz hops (3.0% AAU) 5 min boil 0.5 oz Saaz hops (3.0% AAU) 1 min boil 2 packs WLP800 Pilsener Lager Yeast (plus 1/4 pack for bottle conditioning) Fermenter
Procedures
- Mash grains at 150-153ºF for 60 minutes
- Lauter and bring kettle to volume
- Bring to boil, add 1.0 oz of Mittelfruh hops
- Boil for 15 minutes, then add 0.5 oz Mittelfruh and Saaz hops
- Boil for 10 minutes, then add 0.5 oz Saaz hops
- Boil for 4 minutes, then add 0.5 oz Saaz hops
- Boil remaining 1 minute
- Transfer to fermentor
- Pitch two packs of WLP800 Pilsner Lager Yeast
Primary Fermentation: 2-4 weeks at 50-53ºF, allow to rise to 60ºF near end of fermentation
Secondary Fermentation: 4-6 weeks at 34-40ºF
Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and 1/4 pack of WLP800 Pilsner Lager Yeast for 2-3 weeks

Final Gravity: 1.012
