Quantity Ingredient Comment Malt Style 4.5 lbs Pale Ale Malt Mash Grain Specialty base malt 1.0 lb Carapils® Malt Mash Grain Dextrin Malt 1.0 lb Wheat Malt, Red Mash Grain Wheat Malt 0.75 lb Caramel Malt 40L Mash Grain Caramel Malt (Roasted) 0.25 oz Amarillo Hops (9.5% AAU) 60 minute boil 0.5 oz each Amarillo & Simcoe Hops (9.5% & 14.0% AAU) 20 minute boil 0.5 oz each Amarillo & Simcoe Hops (9.5% & 14.0% AAU) 1 minute boil 0.5 oz each Amarillo & Simcoe Hops (9.5% & 14.0% AAU) Fermenter 1 pack WLP001 California Ale Yeast (plus 1/4 pack for bottle conditioning) Fermenter
Procedures
- Mash crushed grains in 3.5 gallons of water at 153-155°F for 60 minutes
- Sparge grain with 170°F water to obtain desired pre-boil kettle volume
- Bring to boil, add 60-minute Hops
- Boil 40 minutes, add 20-minute hops
- Boil for 19 minutes, add 1-minute hops
- Boil for 1 minute
- Turn heat off and cool wort to 66°F
- Transfer to fermenter
- Pitch one pack of WLP001 California Ale Yeast
Primary Fermentation: 1-2 weeks at 64-68°F
Secondary Fermentation: 1 week at 34-38°F with fermenter-hops
Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and 1/4 pack of WLP001 California Ale Yeast for 2-3 weeks

Final Gravity: 1.009
