Double Down Under
This Australia inspired Double IPA features Galaxy, Ella, and Enigma hops along with White Labs Australian Ale vault strain which ferments clean with a “bready” ester character.
Ingredients
6.6 lbs - CBW® Pale Ale LME - Boil 60 minutes
1.0 lb - CBW® Sparkling Amber DME - Boil 60 minutes
1.5 lbs - Cane Sugar - Boil 60 minutes
0.5 oz - Galaxy Hops (16% AAU) - Boil 60 minutes
1.0 oz - Galaxy Hops (16% AAU) - Boil 15 minutes
1.5 oz - Galaxy Hops (16% AAU) - Boil 5 minutes
2.0 oz - Ella Hops (15% AAU) - Dry Hop
2.0 oz - Enigma Hops (18% AAU) - Dry Hop
2 packs - WLP009 Australian Ale Yeast (plus 1/4 pack for bottle conditioning) - Fermenter
Directions
Dissolve extract and sugar in 5 gallons of water
Bring to boil, add 0.5 oz of Galaxy hops
Boil for 45 minutes, then add 1.0 oz of Galaxy hops
Boil for 10 minutes, then add 1.5 oz Galaxy hops
Boil remaining 5 minutes
Turn off heat and cool wort to 66°F
Transfer to fermenter
Pitch two packs of WLP009 Australian Ale Yeast
