Quantity Ingredient Comment Malt Style 6.6 lbs CBW® Golden Light LME 60 min boil Extract, LME 2.0 lbs CBW® Golden Light DME 60 min boil Extract, DME 0.25 lbs Caramel Malt 80L Steep Grain Caramel, Crystal 0.5 oz Centennial Hops (9.0% AAU) 60 min boil 0.25 oz each Simcoe and Amarillo Hops (12% and 8% AAU) 30 min boil 0.5 oz each Simcoe and Amarillo Hops (12% and 8% AAU) 5 min boil 1.25 oz each Simcoe and Amarillo Hops (12% and 8% AAU) Secondary Fermentation 2 packs WLP001 California Ale Yeast Fermenter 1 capsule Servomyces Yeast Nutrient 10 min boil
Procedures
- Dissolve extracts in warm water, heat to 170ºF
- Steep Caramel Malt for 30 minutes at 170ºF
- Remove grain and bring to a boil
- Add 60-minute Hops, boil for 30 minutes
- Add 30-minute Hops, boil for 20 minutes
- Add Servomyces Yeast Nutrient, boil 5 minutes
- Add 5-minute Hops, boil 5 minutes
- Turn heat off and cool wort to 69ºF
- Transfer to fermenter
- Pitch two packs of WLP001 California Ale Yeast
Primary Fermentation: 2-3 weeks at 67-71ºF
Secondary Fermentation: Add 1.25 oz of Simcoe and Amarillo Hops, ferment for 4 days, then transfer off hops
Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and 1/4 pack of WLP001 California Ale Yeast for 2-3 weeks
