Quantity Ingredient Comment Malt Style 6.6 lbs CBW® Pale Ale LME Boil 60 minutes Malt Extract 1.0 lb CBW® Sparkling Amber DME Boil 60 minutes Malt Extract 1.5 lbs Cane Sugar Boil 60 minutes 0.5 oz Galaxy Hops (16% AAU) Boil 60 minutes 1.0 oz Galaxy Hops (16% AAU) Boil 15 minutes 1.5 oz Galaxy Hops (16% AAU) Boil 5 minutes 2.0 oz Ella Hops (15% AAU) Dry Hop 2.0 oz Enigma Hops (18% AAU) Dry Hop 2 packs WLP009 Australian Ale Yeast (plus 1/4 pack for bottle conditioning) Fermenter
Procedures
- Dissolve extract and sugar in 5 gallons of water
- Bring to boil, add 0.5 oz of Galaxy hops
- Boil for 45 minutes, then add 1.0 oz of Galaxy hops
- Boil for 10 minutes, then add 1.5 oz Galaxy hops
- Boil remaining 5 minutes
- Turn off heat and cool wort to 66°F
- Transfer to fermenter
- Pitch two packs of WLP009 Australian Ale Yeast
Primary Fermentation: PRIMARY FERMENTATION: 1-2 weeks at 66-68°F
Secondary Fermentation: 2 weeks at 34-40°F. Dry hop with 2 oz Ella and Enigma hops.
Fermentation Notes: Force carbonate, or bottle condition with dissolved priming sugar and ¼ pack of WLP009 Australian Ale Yeast for 2-3 weeks
